Every detail of the interior – from the warm colours to the Spanish tiles and open bar atmosphere – makes you feel like you’ve stepped into a street in Seville.
“Will you try one when the protein pizzas are ready?” Emese asks, stirring another batch of dough at the Zabola kitchen doorway with one hand. In the other, she’s already holding a slice. “It’s made with cottage cheese and oat flour. Completely gluten-free. And honestly, it’s really good!”
“You wouldn’t cope without dairy,” Emese says with a grin in the living room of Zabola Hódmezővásárhely, sliding a vegan cottage cheese dumpling across the table. “At least that’s what most people think – until they try it.”
“I bet you wouldn’t dare to hold a live lobster,” Szabolcs, the manager of Bigfish Seafood Bistro, says with a playful grin. Before I can react, he reaches into the tank and pulls out a massive lobster, its claws moving lazily in the air.
